Zucchini Bread Cupcakes

3 eggs
½ cup melted margarine
½ cup vegetable cooking oil
1 tablespoon vanilla
2 cups raw peeled, grated zucchini

Place all of the above wet ingredients into a blender and blend well. This makes a much smoother batter. Pour into a mixing bowl.

Add the following ingredients using the instructions below:
2 ½ cups sugar
¼ teaspoon salt
¼ teaspoon baking powder
1 teaspoon baking soda
1 tablespoon cinnamon
3 ½ cups flour

After blending the first 5 ingredients, mix in the sugar. Then add the salt, baking powder, cinnamon and baking soda. Mix ingredients. Add the flour and finish mixing. Pour into lined muffin tins.

Bake at 350° for about 25-30 minutes, or until inserted toothpick comes out clean. Makes about 3 dozen.

Variations:
Stir in 1 cup of chopped walnuts into the batter before baking.
Top individual cupcakes with about a tablespoon of chocolate chips each, or a combination of chopped nuts and chocolate chips.
Frost cupcakes.

Chocolate Zucchini Cake Brownies

Place all of the above wet ingredients into a blender and blend well. This makes a much smoother batter. Pour into a mixing bowl.

2 ½ cups sugar
¼ teaspoon salt
¼ teaspoon baking powder
1 teaspoon baking soda
2/3  cup cocoa
2 2/3 cups flour

After blending the first 5 ingredients, mix in the sugar. Then add the salt, baking powder, cocoa and baking soda. Mix ingredients. Add the flour and finish mixing. Pour into a greased and floured 13" x 18" jellyroll pan. Bake at 350° for about 35 minutes, or until inserted toothpick comes out clean. Cool and frost. This makes a moist cake brownie. Unless you tell people it has zucchini, they won’t know.

Chocolate Frosting

½ cup butter or margarine (1 cube)
1/3 cup cocoa
1 teaspoon vanilla
2 cups powdered sugar
2 tablespoons milk

Makes 2 cups of frosting.

Melt butter in saucepan and add cocoa. Heat until mixture just starts to boil. Cool completely. Add vanilla, sugar, and milk. Mix well. If it is too thick add a few drops of milk. If too thin, add up to 1/3 cup more powdered sugar.

You may melt the butter in the microwave for about 30 seconds. Add cocoa and return to microwave for 10 seconds. Stir and let it cool.

Be sure to let butter and cocoa cool or you will need about double the amount of powdered sugar and will have a very large batch of frosting.
